Carrot – 1
Snake gourd – 1 small
Brinjal – 3
Raw banana – 1/2

Cucumber  – 1/2
Drumstick  – 1
Raw mango – 1/2
Grated coconut – ½ cup
cumin seeds( jeerakam) – 1 tsp
Red chilli powder-1 tsp
Green chillies -3
Turmeric powder-1/2 tsp
coconut oil- 2 tbsp
Shallots(small onion)-5
curry leaves-10 to 15 leaves
Curd- ¼ cup
Salt-As required



1.Grind  grated coconut along with cumin seeds and green chillies  coarsely and keep it aside.

2.Cut  all the vegetables (pieces  should be lengthier compared to normal way of cutting).


3.Add  shallots, vegetables except  raw mango and banana (they require lesser cooking time compared to others) to the vessel and add water,turmeric powder,chilli powder and cook them.

4.Half way through,add mango and banana .

5.Now add grounded coconut paste and curry leaves  to the vegetables and let it cook for 5 minutes.

6.Remove from stove and drizzle some coconut oil to the mix.

7.After 15 minutes ,add curd to this.

8.Now avial is ready.
