CHICKEN FRY / CHICKEN VARUVAL

INGREDIENTS:

1.Chicken-1/4 kg

2.Ginger garlic paste-2 tsp

3.Red chilli powder-2 tsp

4.Turmeric powder-1/4 tsp

5.Garam masala powder-1 tsp

6.Egg-1

7.Corn flakes flour-2 tsp

8.Lemon juice-2 tsp

9.Salt-as needed

10.Oil- for frying

11.Red food color-1/2 tsp.

12.Coriander leaves-for garnishing

METHOD:

1.Clean the chicken and wash it properly.

2.Add ginger garlic paste,red chilli powder,turmeric powder,garam masla powder,egg,corn flakes flour,lemon juice,salt,red food color to the chicken.

3.Marinate it for 1-2 hours.

4.Heat the pan with oil, when oil is hot enough ,add the marinated chicken, deep fry it in a medium flame.

5.When Chicken  becomes crispier and turns golden brown color,remove it from the flame.

6.Garnish it with coriander leaves and serve it.

CHICKEN GRAVY

INGREDIENTS:

Chicken – ½ kg
Big Onion – 3 chopped roughly
Tomato – 2 chopped roughly

Ginger garlic paste-3 tsp
Turmeric powder – ¼ tsp.
Red Chilli powder – 2 tsp
Coriander powder – 3 tsp

Coconut(grated) – ½ cup
Cumin seeds – 1/2 tsp
Black pepper corns – 1/2 tsp
Fennel seeds – 1 tsp
Bay leaf – a small piece
Cinnamon – 2 pieces

Cardamom -1
Cloves – 3
Curry leaves – few

Lemon juice-3 tsp
Oil – 1 tbsp
Coriander leaves to garnish.
Salt – as required

METHOD:

1.Clean the chicken, add  1 tsp red chilli powder,turmeric powder,lemon juice and salt,marinate for ½ an hour.

2.Grind onion and tomato to a paste ,change to other container,then grind coconut and fennel seeds .

3.Heat a pan,add oil,add bay leaf,cinnamon,cloves ,cardamom,curry leaves and sauté it. Then add ginger garlic paste,grounded onion +tomato paste,wait till raw smell of onion goes.

4.Add red chilli powder,coriander powder,grounded coconut paste, marinated chicken and some water to cook the chicken.mix well.close the pan with a lid.cook it in a low flame.

5.Cook the chicken for 20-30 minutes. Turn off the stove after your desired gravy consistency is reached.

6.Garnish with coriander leaves. Serve it with rice(or)chappathi(or)roti.

Notes:

1.Even you can cook chicken in the pressure cooker separately before adding  all masalas to it.
